Perhaps one of the most important characteristics of Chile is its geography, with the mountains on one side and on the other the Pacific Ocean throughout the whole country.

However, there are not too many preparations that include seafood in Chilean cuisine. One of the best known and desired by all “Caldillo Marino“, and can take different names, like “Paila Marina”.

 

Caldillo Marino is s broth soup and have vegetables, meats or seafood. Caldillo Marino is prepared especially in central Chile and is made with seafood (may include mussels, clams, barnacles and “piures” a very strong-flavored creature from the sea) fish, onions and coriander.

 

 

It is served very hot in a clay pan and it is common to be consumed as a main dish, accompanied by a cup (or glass) of white wine.

When carrying a large piece of fish it is named Caldillo de Congrio (the name of that fish) which has even received many flattery comments and even poems they have been written about this delicacy.

comida chilena-caldillo marinoThe most famous is from Pablo Neruda, one of the most famous Chilean poets. Caldillo Marino even became famous by appearing in the serial Breaking Bad, in which one of the characters was cooking this delicacy in the Chapter 11.

It is regarded as a special dish to rebuild a hangover (called “caña” in Chile) and is also considered a powerful aphrodisiac to stimulate sexual appetite and performance. For example, after the New Year’s Eve there are many who plan a breakfast with a Caldillo Marino to recover after a long night of partying and alcohol.

Price

Usually the value of a Paila or Caldillo Marino fluctuates between $ 2,500  and $ 7,000 chilean pesos, depending on where in the country or city it is consumed. There are small but not very elegant restaurants with very good value for money relation and where usually you will find the best prices and flavor.
